Soul Care - Cooking

During the holiday season, many of us will be spending a lot of time in the kitchen. I hope you find creative joy as you chop, dice, mix, and stir. May your creations be seasoned with nourishment, generosity, and love. 

Below is a variation of an antipasto that is a family tradition. (My family calls it antipasta, which apparently is a colloquialism from the Gargano region of southern Italy.) The key is to roast whole red peppers at 400 degrees for 30 - 40 minutes. When their skins turns three quarters black they are done. Let them cool. Peel the skins and remove the seeds. Cut up the peppers, add olive oil, garlic, and oregano. Garnish with cheeses, olives, and whatever else would make it most appetizing. I take delight in making it visually artistic.
